Smoky butternut squash, eggplant and & bell pepper salad

I made this salad / mezze and also hummus, tahini and burnt peppers when a bunch of friends came over for an afternoon swim (first time in my life that I live in a house with a pool and I’m the only one who uses it!) 

To make this burnt peppers mezze, burn extra peppers, follow the recipe below how to prepare the peppers. Then instead of dicing, cut them lengthwise into strips. Put in a deep plate, drizzle generously olive oil and salt, and add chopped scallion, or any herb of your choice.
