- ½ cup gluten-free rolled oats
- 1½ cups water
- 1 tablespoon coconut oil
- Salt
- 3-5 cardamom pods or ½ teaspoon ground cardamom
- 1 cinnamon stick or ½ teaspoon ground cinnamon
- ¼ cup Nut milk - + extra for servine
- 1 banana or any other fruit you like
- Handful walnuts or any nuts you like, chopped
- Maple syrup or honey
Put the oats and water in a small saucepan over medium heat. Add a tiny pinch of sea salt, cardamom pods and cinnamon stick and stir with a wooden spoon. Lower the heat to simmer. Cook for about 10 minutes, stirring occasionally. Don't let the oats burn. Check if they need liquid. Add the milk and cook for 2 more minutes.
Remove the cardamom pods and cinnamon stick, and discard. Ladle the oatmeal into deep plates. Pour over more milk, as if it was cereal. Slice the banana in with a sprinkle of nuts. Drizzle a little bit of maple syrup and serve.
