Waldorf Salad With Blood Oranges
This is a great salad to make in the winter when citrus are in season. It require only 5 ingredients and 10 minutes. The contrast between the sweet and acidic oranges and crunchy earthy celery is outstanding.

blood oranges diced

or oranges, grapefruit or pomelo

celery sticks, thinly sliced

pecans, chopped
Handful cilantro and dill or just one of them, chopped
Lemon zest from 1 lemon (optional)
Juice of ½ lemon

mayonnaise or Veganaise

olive oil
Coarse salt
Instructions
Put all the ingredients in a medium salad bowl and toss. Taste and correct seasoning. Serve or refrigerate up to 1 day.
