Ingredients

  • 2 cucumbers - cut lengthwise and chopped
  • 4 Campari tomatoes - cut into small wedges
  • 1 small red onion - diced
  • 1 cup cubed watermelon
  • 5 mint leaves - rinsed and sliced
  • ½ cup crumbled feta or vegan cheese
