One Pot, 5 Ingredients Green Soup

One pot. Five ingredients. Twenty minutes. This simple green vegetable soup is what you make when someone you love needs comfort but can barely move. Sometimes the best care comes in the simplest bowl.

Ingredients

  • 1 bunch asparagus - roughly chopped
  • 1 onion - sliced
  • 2 celery sticks - sliced
  • 1 medium zucchini - diced
  • 1 handful spinach
  • 1 bay leaf
  • 2 tablespoons olive oil - plus extra for serving
  • Salt and pepper - to taste
  • Garnish:
  • Dried onion - optional

Instructions

  • Put all the ingredients except for the dried onion in a medium soup pot. Cover with water. Bring to a boil, lower the heat, and simmer. Cook for 20 minutes. Remove from the heat and let cool for 5 minutes before blending.
  • Blend until smooth and silky. Serve in bowls with a drizzle of olive oil and dried onion.
  • Note: You can sauté the vegetables in the olive oil before adding water, but honestly it's unnecessary. The soup is delicious as is.
