I can’t believe I did it! Giving birth to my boys was quicker and easier compared to this beautiful bastard. Writing the recipes properly, like my friend, Karen, taught me, and gathering all the materials — I had to go through my sketchbooks, journals, and random notes — was hardcore labor.
Every time I thought I was ready to publish, something didn’t work. Some days I almost gave up, but knowing that you’ll benefit from it motivated me to continue. Especially you college kids and you who can’t sit down to eat unless there’s a salad on the table.
I wrote this book so you can easily access these salads without scrolling endlessly through my feed or blog looking for a recipe. My hope is that after making a salad once or twice, you won’t need the recipe anymore. Instead, you’ll use the book for inspiration and maybe even create your own salads based on these recipes. I’ve even included a playlist to put you in the mood and make your time in the kitchen more pleasant and fun.
The 25 recipes featured in the book are an eclectic collection of salads that I’ve been making over and over again. They are vibrant, unique, and refreshing, yet made with just 2-5 humble, mostly plant-based ingredients, in one bowl — including the dressing. They are so crunchy, tangy, and naturally slightly sweet that my boys would fight over them, and their juices at the bottom.
